
Cheesecake… yum yum…

So how did I make the cheesecake that I brought into the office and Jill said is so yummy? Well here is the recipie so you can make it yourself!
Crust:
2 c cookie crumbs
1/4 c sugar
1 stick of butter (room temp)
Cheesecake:
3 packs of cream cheese (250 g at room temp)
3 large eggs
1 c sugar
1 t vanilla
Instructions:
1) Preheat your oven to 160 degrees celcius.
2) Mix the ingreedients for the crust together.
3) Spread the crust evenly across the bottom of a 9 inch cake pan. Pack it in using another 9 inch pan to make it tight.
4) Mix together the sugar, eggs and vanilla.
5) Cut the cream cheese into small cube and slowly add one by one to the mix. Mix well. Small lumps are ok, but try to make it as smooth as possible.
6) Pour in the mixture and spread with a spatula.
7) Place in your oven for 40-60 minutes. Turn a few times in between to make sure it cooks evenly. It should have a light even color on top and should not be cracked in too many places.
This makes 16 small-dense slices of cheesecake.
Variations:
* add 170 g melted dark choclate and use oreo cookies (minus the sugar and only 3/4 a stick of butter) for the crust to make chocolate cheesecake
* add 1 t orange oil to add an orange zing
* top with fresh fruit and a fruit glase made from strained jam to make a fruity cheesecake
